Don’t know about you, but I prefer cooking meals that can last for a awhile, or make it easier to cook again throughout the week.  Rotisserie chicken is my current obsession.  It is surprisingly easy to make.  Just 3 steps and 6 hours.

After 5-6 hours on low….

 And after we shred it, we put it in containers and freeze them (one chicken usually fills 5-6 of these containers).  Then throughout the week we use it to make tacos, chicken and rice, sandwiches…etc.
